At our school, you can learn how to make traditional and original fermented foods while enjoying the fun of learning about fermentation. In addition, with the mission of passing on fermentation knowledge and techniques to the next generation, we also provide opportunities for questions and answers by taking courses.

Our modern lives are surrounded by a lot of electromagnetic waves. As the number of convenient tools such as mobile phones, microwave ovens, televisions, computers, and electric cars increases, these may be affecting our bodies in no small way. In the midst of this daily life, I came across a method of growing koji without electricity. Watching the koji ferment in a quiet environment, close to nature, is like being enveloped in the rhythm of nature.
So, we created an original fabric for Ogatatei and named it "Kamohana Hakke." This name has a deep meaning. When viewed under a microscope, koji has a beautiful flower-like shape. The fabric is also octagonal, which has been loved since ancient times as an auspicious shape symbolizing "prosperity," "good fortune," and "happiness."
Furthermore, the Bagua also has the meaning of Feng Shui. It is said to have the power to draw good fortune from all directions and ward off evil spirits. We hope that this koji brewed without electricity will bring lots of happiness to everyone.

Since I was in my 20s, I have been striving for an organic lifestyle and a healthy and natural life. After coming to the United States, I worked as a floral designer for 29 years, during which time I was able to gain many wonderful experiences.
When my husband, who passed away 19 years ago, was diagnosed with leukemia, I learned about macrobiotics and realized the importance of food.
Making my own homemade miso using a YouTube video as a reference sparked my interest in fermented foods, and now I make my own koji and occasionally hold and teach fermented food classes.
Vision and Goals
My vision is to promote a healthy mindset and a richer life through additive-free fermented foods. I want to let more people know about the amazing effects of fermented foods and share information that will help them incorporate them into their daily lives.
