Additive-free salt mirin making workshop

Ogata always thought that he would buy soy sauce, miso, and mirin at the store, but after learning how to make koji, he was able to make his own fermented seasonings, and now he mostly buys store-bought ones. died.

Fermented seasonings commonly sold contain preservatives and additives.

Nowadays, cricket soy sauce and miso are on the market.

Is this also due to concerns about food shortages?

Mirin has only three ingredients, just like miso.

Malted rice

Alcohol (shochu)


Just mix these simple ingredients and let it rest.

Mirin is ready.

In this shio-mirin making workshop, we will be making shio-mirin by simply mixing it together using the rice malt that Ogata brewed.

The reason it's called salt mirin is because it's illegal to make alcohol at home, so a little salt is added to it.

Once you try it, you'll never go back to the restaurant's taste!
